Chicken and rice is one of those basic preparations that always works: light, digestible, and appreciated even by the pickiest dogs. It is prepared in a single pan and can be served as a special meal to change the usual menu or, in a simplified version, as a bland diet when the dog is not feeling well. The basic recipe calls for brown rice for those looking for more fiber, but if the dog has an upset stomach, it’s better to choose white rice and omit the vegetables.
Ingredients
- 15 ml (1 tablespoon) of extra virgin olive oil
- 225 g of boneless, skinless chicken breast, cut into small cubes
- 100 g of brown rice (white rice if the dog has a stomach ache)
- 240 ml of unsalted chicken broth free of onion and garlic (or water)
- 15 ml (1 tablespoon) of chopped curly parsley
- 50 g of grated carrots
- 50 g of thawed frozen peas
Procedure
- Heat the oil in a large pan over medium heat.
- Add the cubed chicken and cook for 5-7 minutes, stirring, until it is no longer pink.
- Pour in the broth, rice, and parsley, stir, and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15-20 minutes, until the rice is soft and the liquid is absorbed.
- Add the grated carrots and peas and stir until they are heated through.
- Turn off the heat and let it cool slightly before serving to your dog.
Notes
For a bland diet, use only chicken and white rice, omitting vegetables and oil. In that case, it’s advisable to boil the whole chicken breast in water or broth for 12-15 minutes, shred it, and mix it with the cooked rice separately. You can vary the recipe with chopped zucchini, sweet potatoes, spinach, broccoli, or cooked salmon instead of chicken.
Storage
Store in an airtight container in the refrigerator for up to 5 days. It freezes very well in single portions, to be defrosted in the fridge the night before.
