Method
- Remove any ties from the chicken; you can keep or remove the insides.
- Fill a large pot with enough water to completely submerge the chicken.
- Bring to a gentle boil, then reduce the heat to a simmer.
- Cook for about 90-120 minutes, until the meat is tender and easily pulls away from the bone.
- Remove the chicken and let it cool.
- Carefully remove all the bones, checking for any fragments before serving.
- Shred the chicken and divide it into portions in containers.
- Do not discard the cooking water: strain it and keep it as homemade broth, great for meals or freeze it in cubes.
