The chicken, barley, and seasonal vegetable minestrone is a very hydrating homemade dish, ideal for the colder months. The presence of pearl barley provides slow-release carbohydrates and fiber, while the mix of vegetables ensures a good supply of micronutrients.
Ingredients
- 200 g of diced chicken breast
- 100 g of pearl barley
- 120 g of carrots
- 120 g of zucchini
- 80 g of celery
- 100 g of potatoes
- 1 teaspoon (5 ml) of extra virgin olive oil
- 900 ml of water
Method
- Rinse the pearl barley under running water.
- Peel and dice the potatoes and carrots. Wash and chop the zucchini and celery as well.
- In a large pot, pour in 900 ml of water and bring to a boil.
- Add the barley, carrots, celery, and potatoes, and cook over medium heat for 25 minutes.
- Add the diced chicken and zucchini, and continue cooking for another 15 minutes.
- Check that the barley is tender and the chicken is well-cooked, then turn off the heat.
- Add the EVO oil, stir, and let it cool slightly before serving.
Notes
Pearl barley is an ancient cereal that is easily digestible, rich in soluble fibers that promote intestinal transit. The broth that forms during cooking helps keep the dog hydrated, especially useful for those who drink little water. Always serve warm, never boiling.
Storage
In the refrigerator in an airtight container for up to 3 days. It can be frozen in portions for 2 months; when ready to consume, heat it on low, adding a bit of water.
