The egg, ricotta, and zucchini meal is a protein-rich recipe without meat or fish, perfect as a weekly variation or on days when fresh animal proteins are not available. Eggs and ricotta provide high biological value proteins and calcium.
Ingredients
- 2 medium eggs
- 120 g of cow's ricotta
- 250 g of zucchini
- 100 g of white rice
- 1 teaspoon (5 ml) of extra virgin olive oil
- 1 bunch of fresh parsley
Instructions
- Cook the rice in unsalted water following the instructions on the package.
- Boil the eggs in boiling water for 9 minutes, cool them, peel them, and cut them into cubes.
- Wash and cut the zucchini into cubes, then steam them for 8 minutes.
- In a bowl, lightly mash the ricotta with a fork.
- Add the rice, zucchini, eggs, and ricotta, then add the EVO oil and chopped parsley.
- Mix carefully and let cool slightly before serving.
Notes
The whole egg has the highest score in terms of biological value among food proteins. Ricotta provides calcium and whey protein well tolerated by most dogs, but always check for dairy tolerance, especially in subjects that have never tasted it. This meal is not intended as the sole protein source for the week, but as a supplement to dietary variety.
Storage
In the refrigerator in an airtight container for up to 2 days. It can be frozen in portions for a maximum of 1 month.
