Ingredients
- 4 tablespoons of oatmeal
- 2 tablespoons of xylitol-free peanut butter
- 1 egg or 1 flax egg
- 3-4 tablespoons of unsweetened applesauce
- microwave-safe cupcake molds
- 2 teaspoons of lactose-free yogurt
- 2 teaspoons of fresh cheese
- blueberries for decoration
Procedure
- In a bowl, mix together oatmeal, applesauce, peanut butter, and egg. Stir well.
- Pour the mixture into the microwave-safe cupcake molds.
- Cook in the microwave on high for 90 seconds, then let cool.
- For the frosting, mix lactose-free yogurt and fresh cheese in a bowl until you get a smooth cream.
